Fist, baseball bat, hockey stick, fire extinguisher and .22s will knock you out if you're healthy with a blow to the head. 9mms and 5.45s to the chest are good too.

Hit a guy in the head with a sporter while he had a helmet on, lots of health loss, no bleeding and unconcious

Maybe the stun baton?

Never tried it.

Rubber bullets would be fun.

Think you need batteries for those. The stun baton that is, har har har.

---Melee weapons I can think of---

-Fist

-Fire Extinguisher

-Bat (Without nails)

-Hockey Stick

-Shovel

-Hoe

-Long Wooden Stick (Previously Ashwood Stick)
-Crowbar

-Pipe Wrench

-Lead Pipe

-Meat Tenderizer

-Telescopic Baton

---Ranged weapons I can think of---

-Sporter .22

-Trumpet

-----------------------------------------------------------

This all being said the obvious thing is that with most all of these weapons it MUST be a headshot to knock someone unconscious, otherwise you will simply cause bleeding (which will of course eventually lead to unconsciousness, shock, etc.)
