Can server admins remove gear off of you?

No, I don't believe there is an option to remove gear from specific players. Most likely as mentioned above. :)

Admins can do hee-haw other than kick players, talk in global and restart the server.

It's one of the new hacks going around, as said above admins can't really do anything other than kick players, set the MOTD and turn the server off and on.
