The Food/Drink doesn't go down

I have been staying in one place for a while now (60mins) and my character has still full Drink and Food, last time i played and kept running to find a friend I was thirsty and needed some food. The question is... Do I need to be in movement so my character gets hungry and thirsty? I was also wondering where is the best place for searching for bigger back packs then the starting one.

Please answer.

Yup. Running makes thirst go down faster, and food is from being attacked and it goes down as you run.

Notice when driving cars nothing goes down.

Just make sure you dont have your debug monitor on...

that's what i thought first. if you're debug monitor is on, your blood/food/drink icons will appear to freeze, but they are actually still draining

My other question is: Where can I find good bag packs? Not talking about the best one but at least Assault Pack for example.

You'll find Alice packs in grocery stores quite a bit.

debug on default to see hunger going down.

civilian buildings are for chzeck vest pouch (6 slots), chzeck backpack (16) , alice pack (20)

military buildings are for assault pack (10-12 don't remember!) and coyote backpack (24)

i am quite the noob at dayz, since ive only had it for 5 days so far and i havent found any locational items like maps watches compasses etc. or any other backpacks :(

Have you checked out any grocery stores or office buildings? Both will have watches, maps and compasses, but I don't recall too many backpacks in offices. It might be worth a bit of a trek up north to some smaller towns that have one or both. Vybor comes to mind... Approach it from the SE for the least amount of agro zombies. :)

Backpacks spawn in civilian housing. Grocery stores, office buildings and cafés have the most possible loot spawns.
