What server have you found is the most co-operative when it comes to players? As we know there are many KoS survivors/bandits. Has anyone ever been in a server with a few friendly faces more than once in a while?

Most all servers are equally plagued with KOS mentality; sorry to say.

There are co-operative servers within DayZ?

Never seen one. Join a group/guild/clan or whatever other post year 2000 term you guys use for banding together these days.

Back in my day they would simply be called mates (and no... not the rubber kind).
