I honestly don't know anymore, because I've experienced the opposite of this.

I once had a car going, then had a server lag spike which caused me to hit the wall beyond the turn I was trying to make.  The impact ruined the radiator, but not the car itself and there was an industrial loot area not far away, so I decided to go look for a replacement radiator.

I removed the spark plug and took it with me, but I left the ruined radiator in the car.  I went to the industrial area and found a new radiator in one of the garage-like sheds, but when I returned, the car had vanished.  I was gone less than 15 minutes and encountered no other players in the area.  I've seen this happen to others in streams/videos that I've watched and I always thought it was related to having something ruined attached to or in the car.

You didn't mention anything being ruined, so maybe it is disappearing by simply removing a part.

In my experience,  Cars go bonkers depending on the surface they're on.  Ever since I started parking on flat ground, away from trees, bushes, and other world objects I haven't had any problems.  Seems like on reset or refresh, they update and when there's something underneath them they totally flip out.
