Servertime, when does night start?

Hopefully someone can give me an answer.

When does the sun start to go down so I can push servertime a little off that people have both daylight (18:00-23:00) and nighttime (from 23:00 onward)

It depends on the server your playing all night and day settings should be taken from the actual box the servers run on.
