How does storage work in DayZ?

I'm curious as to how it works when it comes to things that take up more than one spot.

If you store a main rotor assembly in your inv/bag, it takes up 6 slots, but does it take up 6 slots in the car?

Yes, the same amount of slots that is required to store an item also applies to anything that stores items.

anywhere i can find a list how how much stuff i can put in each type of vehicle
