Does it matter which server you pick?

I still don't have the game, but I'm pre-planning.

What server should I pick ? Does it matter?

I live in Ontario, Canada.

It's really up to you, go on one with a close location and a timezone that you like.

What you should do is pick a server closest to you and a server with the lowest Ping(High Ping=Lagging As Heck)
