That brings me to another question....do difficulty settings ACTUALLY make the game any more difficult? Or is it just about the settings placed within that difficulty setting? Zombies dont hit for more or have more hp or anything along those lines...correct?

In regular ArmA I think difficulty setting influence on AI intelligence, accuracy, but I don't know if there's any difference in DayZ.

Most of the difficulty settings just enable/disable players assisting features, plus any difficulty mode can be edited and customized. If you want to check out the features, check game options, click on the difficulty tab, in your main ArmA menu.
