SA shoot guns out of hands

If you have to fire your gun, you might as well do it correctly and aim for center mass.

If it were to happen, it'd be a fluke more than anything else.

Like the OP says, you can already (intentionally or not) shoot folks guns, it just doesn't have any effect. At all.

Just to clarify my suggestion was not exclusively to knock a gun out by shooting the gun itself, but by alternatively shooting them in the hand/arm as well. I'm not going to debate whether or not it is realistic to have a rifle shot out of your hand as I just don't have any actual experience shooting guns or anything. My thought would be that the shock of it would probably be enough to reflexively drop it, but then some one is probably just going to call me a pussy or something hahahaha. Assuming weapons need to be cared for in the stand alone, which it sounds very much like they will, I think hitting their weapon itself should damage it.

Any ways, perhaps hitting their right hand (assuming shooting stays right hand dominant) could be the trigger. Or shooting their whole right arm/hand area enough to trigger a bone break much like breaking legs. I think in red orchestra it is just getting shot in the hand itself, and it never seemed to happen all that often to random chance.
