Your example isn't really clear...

Just a warning, people are gonna come in here and shout "no skill trees!" I think player skill should be just that - player skill... not how long you've been playing or how many "levels" your character has.

That would require making certain tasks a bit more difficult than simply clicking an option that says "Gut Animal", etc.
