Laws of war / Geneva Convention hold no authority in Dayz and are meaningless here. Therefore, a surrender flag has no value. The 'hands in the air' function seems like enough.

Wednesdays probably because Thursday through Sunday is too late in the week. If they release by Wednesday then they have time to react if something goes wrong/ unforeseen bugs before the weekend comes

He could have been trying to trap you. It's a common occurrence to find fresh spawns of a clan's group doing recon like that. He was probably relaying your position to his mates so they intercept and kill you. You totally did the right thing. That new spawn deserved to die.
