If you double tap + it will stay zoomed in. Same for almost every key in DayZ.

Double tap a key to "toggle" constantly on. Hope this helps.

I managed to unzoom from the sniper scope... That + or - just zooms in. How do I scope and Unscope??

Mouse2 button is the default key for sights in guns.

Right mouse button will make you scope or unscope.

And + or - will zoom in or out, which is the question you asked.
