Do server log files reveal hackers?

Recently me and my friends have started up a server and it's good to have a place to call home :P

And while getting myself familiar with server control panels and what not I've been looking through the server log files out of curiosity and I was wondering, how can you tell from the log files if someone has been hacking? While playing, it will be easier to catch them, but if I haven't been able to play (like today), it'd be nice to be able check the log for any suspicious behaviour.

Can anyone point me towards a website or forum posts that contains help on being able to identify hacking? Just in case it happens to me in the future. I've tried searching the forums and done a few google searches but strangely I haven't found anything.
