Is it at all possible to control where you land? I've seen Arma videos showing them having almost complete control over it... but in DayZ it seems like it just takes you wherever it wants.

If you want to practice, disable the DayZ mod in the extensions option from the game's main menu (to stop it from blocking ARMA 2), reboot and play some of the pre-set Arma training missions. There is one specifically for parachuting and the best way to learn is to do it yourself. B) While you're there have a go at flying a helicopter!
