I mean it LOOKS like my car and it's parked in the same place as I left MY car, but the contents inside it have changed.....

Maybe the magical server restart fairies decided to replace my AS50 and L85A2 with a DMR, M4A1 SD and a M4A1 Holo. But all my ammo and other stuff is totally randomised :(

I'm not exactly complaining, I didn't do too bad from the fairy exchange, but does this happen often?

One of two possibilities, the car reverted to an earlier save state and you got what was previously in the trunk, or somebody found your car, took your rare guns, and left you good guns as payment.

The first seems far more likely.
