You already can: just make sure you have a server which can handle it and contact the DayZ team to recieve the files and information to host the server.

However, since DayZ is connected to a single hive it's not possible (nor allowed!) to have private servers.

Hopefully Rocket and the DayZ team will allow this in the future, but this also means your character can not be persistent over all the DayZ servers anymore.

And still there is a way to make your own non-hive server ;-)
