In the player profile, what is the significance (besides name and appearance) of having multiple profiles? Does this mean one can have more than one character with different inventories?

No, to have another character you need another copy of Arma.

The profiles will only change your name.

If you delete the profile and create a new one it will only apply the new name to your character.
