it's causing my eyes to hurt with the really dark background and massive amounts of connect/disconnect white text

Unfortunatelly there is no way that you can do that yourself. But there are attempts to make the devs of DayZ aware of a mod (has to be allowed server side) that would hide all messages (including chat).

The only thing you can do is to go to your "options", "video options", then select "advanced" and set "interface size" to "very small" which will decrease the font size and in turn reduce the portion of your screen obstructed by those messages.
