Does the Sun?

If it's 6pm in the UK and I join a UK server and it's still daytime, maybe just about to get dark will the sun be in the realistic place it would in real life?

What I'm saying it; does the sun rise in the East and set in the West? If so, that is how I would find my bearings, I do it in real life all the time.

Yes. You can also navigate by the stars if you know how to do so. If you have a watch, you can tell directions using the sun and shadow as well. The only really unrealistic thing is that the clouds always move from the west to the east.

Notice that a lot depends on your servers GMT setting, but yes, all lighting in the game trys to be realistic.
