I always go by the beta version listed in the server info. The arma 2 server browser displays this at the bottom right when you have a server highlighted (1.61.9XXXX or whatever). I ignore servers without the latest beta or without the extension after 1.6X. As for what day z version they are using, I take their word for it, and if it's wrong, Day Z will alert me as I log in or not let me log in.

Only you. EVERY server shows the Day Z version and Arma 2 Beta version. (v1.7.x.x/beta 9xxxx)

Like I said, I use the gamespy server selection within arma 2. I don't use six launcher to select. Gamespy displays more exact server info.
