I'm having a bit of trouble getting started in this game. I can go into Elektro and get out alive but I'm always missing something, usually it's a hunting knife. Because I this I won't be able to survive long because I can't get food from animals so I was wondering, how do you start up and get everything you need?

For food you should take a trip to the Supermarket after that the North is the way you wanna go for just keep following roads and watch out for road signs they'll lead you to the next village/supermarket and in one of these markets you will probably sooner or later find your knife and will no longe be forced to visit villages.
