Now, this could be one of those "duh" questions, but when I looked up "Infection" on the DayZWiki, it said that infections drop your health to 6000.

An infected player looses Blood continously but slowly down to a bloodlevel of 6,000.

Does that mean that it will go slow until 6k or will drop to 6k and then you die faster?

No, it'll drop to 6k. At 6k your character has less hearing, less vision (higher contrast) and is suseptible to OHK by zombies.

If you hit 6k and then eat or get blood transfusion can you re-heal or do you lose health again?
