We should have to take our bag off to access the contents

You see this on some hardcore modded servers and i think it would be a good addition to the base game. It would make the dynamic of gunfights a lot more interesting as you have to prioritise your shoulder slots and cant just whip out a gun from your backpack. I think it fits into the more realistic approach the game has been taking.

When you open the inventory you don't see anything, it's as if you had done what you said, but you could add the animation that at the same time you open the inventory the character bends down and pretends to check the backpack, then you can add some delay in reinstatement.

By this I mean you wouldn't notice any change, you'd just see the other player crouching down checking his backpack, but it would be pretty much the same, which I don't see as a bad thing about, visually is more realistic. 

Then there are the quick-change slots, but they're supposed to be slots where you have weapons at hand, perhaps slower and more realistic animations, with more delay, but in general there you don't have to take anything out of the bag.

If you're referring to leaving the backpack on the ground and then looking at the inventory, that could be done with large backpacks, it would be a good idea, but not with all of them, because a light backpack can be turned sideways, bent down, and search. As you can see, this backpack is very large and you might need to leave it on the ground and look for it.

This backpack is smaller and perhaps you could do the first thing I said, simply if you open the inventory the character crouches down and opens it automatically.

It would be a way to play with its playability, you can carry more material, yes, but it has its drawbacks, and the one that carries less is more agile and lighter, it would adjust more to a balanced real gameplay than if all the backpacks had the same process.

I advise against having to bend or kneel to view, retrieve, place, or access an item in the bag, but the bag must not reveal its contents; you can lift and open it to access its main contents.
You can do this while walking or even jogging. No need to crouch down.

It's simple: developers can simply block access to the bag's contents when unopened or when worn on the back, with the exception of contents placed and/or attached to the bag's proximity slots.

Developers can add a bag open/close toggle with a proper zipper sound before accessing the contents.

An interesting interactive feature between peers is the ability to stand behind someone wearing a backpack, open it, access its contents, and close it back. This might come in handy with a teammate.

Hence the importance of always keeping your bag closed, as the sound indicates its opening/closing.

It's a game to be careful not to leave your bag open. Even if it's just against the rain or if you lose consciousness and fall to the ground with your backpack open, there is a risk of some items falling to the ground, especially when stacked.
