Is it the same problem on all servers with private hive that the food/water and health indicators are not showing?

Not all. For example, I play regularly on the UN 1pp hive - server 1 works as intended, server 2 has the issue with indicators. I think on servers without indicators, you're also not actually affected by bleeding, starvation, etc. You also appear not to be able to recover from going unconscious. Haven't tested it well, though.
