What are the controls for melee weapons?

Pick one up, you might have to reload and then you just click normally to attack. No attacking while moving as per the Arma 2 engine and yeah. They're silent and really effective.

Watch out for crawlers. I haven't yet figured out how to effectively hit a crawler before that thing magically bites me 3 times without an animation. :P
