I'm interested..... What's the ref to veteran about though on the servers though?, as a noob I've been sticking to the regular ones on the basis that I thought veteran would mean tougher or experienced etc

All Veteran means is more things will be disabled. It still varies per server, but most veteran ones will have nametags turned off and map markers (your specific location and the specific location of all entities you can see) is turned off. This one still has 3rd person and crosshairs as it says in OP, so overall I think it's safer to play on veteran, so hostile players can't track you as easily.
