ok i have 1 profile now with some good gear on it but i whant to start over again but with out deleting or killing the guy with good gear

can i start a new profile so i have 2?

I have tried by making another Arma profile but it just changes your name and face if you decided to alter that but sticks you on the same guy.

To have a second character, you have to buy another copy of ArmA 2.

Your character is tied to your game GUID (CD-key).

Changing profile makes no difference (except name/face change).
