So I hadn't played dayz in a few months, and when I updated and logged back into a random server, my character was reset and it reset to male with no option to choose female... am I missing something? Is there anything I can do to get my stuff back?

No one can help if we don't know what server you were playing on TBH. I would just suck it up and carry on. In your time away you forgot the golden rule: Don't get attached to your gear.

Regarding other changes, there have been many since you last played. Go and have a look at the changlog for all of the updates, that'll get you up to speed.
