Yes, blood is tied more to unconsciousness, health ties with death. As far as I know, you can use medical supplies to regain blood, but health is tied to time. Yes, the lack of info is pretty annoying. Whether the end design is supposed to keep you in the dark about the status of your character or not, during an alpha we should have a debug display to work with. Vote up the display ticket: http://feedback.dayzgame.com/view.php?id=1977 Eating a full milk packet will give you about 5% of your max energy. It will not fill you up. Drinking from a well gives you 100 water a gulp, you need to drink 40 times to max out your water. Those messages are there to say you're almost starving to death , get some food/water soon or die. There used to be a green message that popped up when you max'd out your water, but I've not seen it in a few patches now. Food messages kick in at 600 and 300 energy remaining. Head hurting and water related messages kick in at 2000 and 1000, so 50% and 25% water capacity. Food and energy values are different from "Stomach" which has a max capacity of 3000, meaning if you gorge yourself you'll vomit, so go easy when you're at a well. Ratio is 2 water : 1 stomach, this holds true for the well, canteens and water bottles for now. I don't know the rate that your stomach empties, or that you consume food and water.

Charcoal tabs gets rid of food poisoning, but not chemical poisoning. Don't expect charcoal to save you if you gulp the disinfectant. -

Rotten food is 50% chance nothing, 45% chance to get mild poisoning, 5% chance for heavy. -

Antibiotics heal normal sicknesses. You can't heal sickness from a bad blood transfusion.Alcohol tincture disenfects wounds, usually made by zombie hits.Disenfectant spray can be used on objects to clean them, IE clean a battery before you lick it so you don't get sick. Or rags for bandaging.Charcoal tabs work against food. EDIT: Apparently charcoal only works against food poisoning, not chemicals. Don't drink that disenfectant.Epi pen reduces Shock stat value.Saline and blood bags increase blood.Health regen kicks in when your blood is full at 5000 and you're well fed and watered.Guessing defib acts liks Epi pens and reduces shock.Don't think painkillers do anything yet, but they may be another shock reducer.Vitamins probably tie into the non-functional exposure/nutrition rating system.Water purifier tabs don't do anything yet.Morphine heals broken legs.Wooden sticks can be made into splints for broken legs. That should pretty much cover it.

Saline restores 5000 blood, IE max. Blood bags only do 500, and then there's the risk of blood types if you haven't checked. Not sure if blood bags track infected blood or not. Right now Saline is by far the go to for refilling your blood and getting your HP regen started.

Regen won't be fixed until the 113842 patch that they're working on in closed testing right now.

Medical equipment in the North

Most of the north side of the map is unfinished, the buildings are not placed. Its likely that the new towns to the north will have hospitals scattered around. Medkits aren't all that uncommon, if you need saline try barracks. -
While this diverges into IRL vs DayZ, I thought I'd mention that the accuracy rating on the m4 is variable, as noted by swapping out the CQB stock. Since this is an alpha, the likelihood that the accuracy values need tweaking is high, as is the chance that there's a bug in their component system that's hosing it.

You don't get blood from food . . . You get energy and sometimes water from food. When you're well watered and fed, you regain blood as is natural. Values listed on the link there are what we saw from the pbo files from day 1. The issue isn't really a question of the system, but why the desaturation isn't letting up after the expected healing has occurred over hours. It would be nice since this is an alpha that we'd have a debug view of our stats so we could determine what the cause was. Is the vision bad because the health and blood stats didn't fill back up? Is the vision bad because its not updating with the server that you're healed? Is it both? Is it the shock stat that's up that isn't resetting? Unless he's trying to keep the back end of this super secret, I really don't see why we don't have a full breakdown.

Supposedly the HP regen is 1/sec while flagged, which means full health in less than an hour and a half. Blood is supposed to regen at 2 levels, 1/sec and 3/sec depending on water/energy state. So while gorging yourself on food and water constantly for a couple hours of play you should be back to max. My guess is that the triggers for the vision aren't being reset when you get back to higher amounts of health and blood. Saline, blood, maybe painkillers? all might act as triggers for the game to check your levels and update your vision, even if you're already full.
